Tête de Moine (Monk's Head) cheese has been produced over 800 years in only 9 dairies located in Switzerland's Bernese Jura region. The cheese is wonderfully spicy and aromatic with a strong, nutty flavor. To use the girolle, you plant its vertical axel through the middle of the cheese (usually a 2-lb wheel) and turn the handle with scraper for paring the rosettes.
