Made of tin steel, every bakery has stacks of these pans in every different size. After baking your fruit tart or quiche Lorraine in this classic pan, you pop the finished product out of the pan and present it on a pretty platter. Don't put it in the dishwasher and be sure not to put it away wet. They run about 1 1/16" deep and have distinctive scalloped sides. Made in France as it should be.
