We all slow down, hunker in and cook.
My go-to for the cold weather is turkey chili. I roast some local sweet potatoes from The Farm Store and toss them in the pot along with whichever beans I have the most of (I like black beans the best). I pour in a couple of jars of 2014's tomatoes that I canned in warmer weather and let it simmer in my Staub Dutch oven for hours. It never comes out the same way twice.
But today's snowstorm is making me think of preparing a Thai Chicken Coconut Soup.
I celebrated Chinese New Year at the Inn at West View Farm last night. Chef Ray Chen prepared 12 'little dishes' for a dining room packed with (happy) foodies. It was off-the-charts good.
So those Asian flavors are on my mind and my taste buds.
I hope it keeps snowing.
